Salmon Bake
Ingredients
2 (4-ounce) fresh salmon, broiled
1 medium onion, chopped
2 stalks celery, chopped
½ medium bell pepper, chopped
2 egg whites, beaten
¼ cup plain low-fat yogurt
¼ cup sourdough bread crumbs
¼ cup water
Directions
- Skin and bone salmon, then crumble.
- Saute onion, celery and bell pepper in water until golden.
- Add more water if necessary.
- Combine with salmon and yogurt.
- Mix in beaten egg whites.
- Place in Teflon or nonstick baking dish.
- Sprinkle with thin layer of bread crumbs.
- Bake at 350 F for 1 hour.
- Serves 2.
