Salmon Bake


2 (4-ounce) fresh salmon, broiled
1 medium onion, chopped
2 stalks celery, chopped
½ medium bell pepper, chopped
2 egg whites, beaten
¼ cup plain low-fat yogurt
¼ cup sourdough bread crumbs
¼ cup water


  • Skin and bone salmon, then crumble.
  • Saute onion, celery and bell pepper in water until golden.
  • Add more water if necessary.
  • Combine with salmon and yogurt.
  • Mix in beaten egg whites.
  • Place in Teflon or nonstick baking dish.
  • Sprinkle with thin layer of bread crumbs.
  • Bake at 350 F for 1 hour.
  • Serves 2.
