Gazpacho (Spanish soup)


4 pounds large ripe tomatoes
1 cup cold water
1 large bell pepper
1 large onion
½ teaspoon pepper
1/2 teaspoon garlic powder
1/3 cup chives, chopped
Crumbs made from 2 large slices sourdough bread, toasted
½ cup lemon juice
2 cucumbers (unpeeled)
1 (12-ounce) can tomato juice (unsalted)
Homemade sour cream (below)


  • Blend all ingredients, except chives, in blender.
  • Chill several hours.
  • Serve in individual bowls with a tablespoon of homemade sour cream and a sprinkle of chives on top.
  • Serves 10.
