Baked Matzos Casserole

Ingredients

Water to cover matzos
3 matzos (unsalted)
½ teaspoon cinnamon
2 tablespoons raisins
½ cup plain low-fat yogurt
½ (6-ounce) can frozen unsweetened orange juice concentrate
3 egg whites, beaten
2 cups apples, sliced and peeled

Directions

  • Soak matzos in cold water and squeeze out liquid.
  • Add cinnamon, raisins, yogurt and frozen orange juice.
  • Fold in egg whites and apples.
  • Place in covered 8 ½ x 8 ½ x 2 ½ inch casserole dish sprayed with nonstick spray.
  • Bake 45 minutes in a 325 F oven.
  • Uncover the last 15 minutes.
  • Serves 3.
